Hacienda Carmona is one of the oldest farms in Guatemala, growing agricultural produce from the time of the original European settlers in the 1500’s. Descendents of the present owners, the Zelayas made the transition to Arabica coffee in the great South American agricultural boom on the late 19th and early 20th centuries. They’ve been doing a great job ever since.
Managed my Maria Zelaya Aguirre since 1959 Hacienda Carmona sits on steep ground between 5200 and 6100ft, in the Antigua valley, west of Guatemala City. And as with many central American coffees processing is key. Where Carmona is wet processed, only fresh spring water from the surrounding volcanic mountains is used. This all works to produce a delicious and consistent cup.
That’s not just our opinion. Carmona has fared well in Cup of Excellence, several times in recent years, including a very respectable 22nd in 2009. Carmona will impress whichever preparation method used but if you can try it as an espresso. The velvety mouthfeel, intense dark chocolate with hints of fruit is just delicious as a doubleshot ristretto or short milk drink.
